These really aren't from this week, they are just meals I'd saved so that I could have a food post while we were away in FL eating too much junk food. Oh, how I wonder what we'll feed our kiddo while we're there?
Okay, here's a little trick we've done with Nathan a few times to try to get more veggies in him... that green bowl has Campbell's Select Harvest Healthy Request Italian Wedding Soup (that was a mouthful) in it, rinsed. I thought he might eat the pasta, but instead, he ate the meatballs and most of the veggies. We've tried this with minestrone and other veggie varieties too. Also, blueberries, Just Veggies dried veggies, and our favorite Palermo's pizza!
Next up, yummy breakfast meal... and lunch the next day too! Lite syrup (which ironically Nathan didn't really touch even though he loves to dip), strawberries, eggs (these are the kind, and I can't remember the name) that are pasteurized to remove the salmonella from them) with cheese, and these yummy Nature's Path Flax Plus Multigrain Pancakes. To the mix, I added one banana, chopped walnuts, and ground flaxseed. These pack quite a powerful punch for pancakes. I also made a dozen of them and Nathan ate them all week at various times.
While this might look nasty, it's a spin off of my crock pot chicken I posted about here. I put two frozen chicken breasts, a can of organic spaghetti sauce, an 8oz can of V8, ground flaxseed, a can of black olives, and a 1lb bag of Bird's Eye Asparagus Stir Fry mix (which contains asparagus, carrots, green beans, cauliflower, and a bit of pasta) into a crock pot for about 8 hours and it was delicious! The chicken falls apart and oh my goodness it is yummy. Nathan thought the olives were "meat" and he loved them! To add to the goodness, I added kiwi to his plate, but Nathan preferred the veggies and chicken!
I'm turning into a bit of a sneaky chef! These are chicken nuggets and since my kiddo loves to dip, I gave him stage 2 green beans to dip the chicken in! Hee hee! He was just happy to dip. This was served with 1/3 of an avocado and 1/4 of a mango.
Lastly, these little muffins were a big hit! I used Martha White Honey Bran muffin mix as a base, although next time I'll try Hodgson Mill Whole Wheat or Bran muffin mix. To the mix, I added the ingredients it called for, one banana, ground walnuts, and ground flaxseed. Nathan loved them I and I enjoyed giving him a quick snack that was healthy (or at least healthier than it could have been). :)
So... what's on your tot's plate? Please share your ideas with the rest of us! Link up your post here!

Great ideas! I may copy a few of these!
Fun ideas. I'm going to try the "baby food as a dip" idea!
